Harry Potter Inspired Pumpkin Pasty Recipe

The traditional Pumpkin Pasty is meant to be like a savory cornish pastie, but my take on this iconic Wizarding World dessert was a little sweeter. I like to think of it as a blend of muggle and magical tradition.

Filling Ingredients:
- 1 Can Pumpkin Puree
- 1 tsp Cinnamon
- 1/8 tsp Allspice
- 1/2 tsp Salt
- 1/8 tsp Cloves
- 1/4 tsp Ginger
- 1/4 tsp Nutmeg
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 1 tsp Vanilla
- 3 Eggs, 1 Egg Yolk
- 1 1/2 cup Half ‘n Half
Pastry Ingredients
- 2 1/2 cups All Purpose Flour
- 2 tbsp Cane Sugar
- 1/2 tsp Salt
- 2 1/2 Sticks of Cold Unsalted Butter
- 6 tbsp Cold Water
Pastry Dough Instructions:
- Prepare the pastry dough first. It will need at least two hours if not overnight to chill.
- Measure out all the flour into a the bowl of a food processor. Add in the sugar and salt and pulse to combine.
- Cut butter into slices and lay it evenly over the surface of the flour. Begin pulsing the flour and butter together. Continue until the flour and butter are completely combined and there is no dry flour in the processor and the dough has clumped up.
- Sprinkle the water over the dough through the top of your processor while it is mixing to combine water into the dough.
- The dough will develop into a ball and that is when to stop the food processor. Do not over-mix the dough.
- Cover dough in plastic wrap or sustainable wrapping and place in refrigerator for two hours or overnight until firm.
Filling & Dough Prep Instructions:
- Before preparing the filling, allow dough to thaw out slightly for rolling. This is especially important if you allowed the dough to cool overnight.
- Combine pumpkin puree and spices. Mix well.
- Smooth puree straight onto a baking tray.
- Bake mixture at 350F for 12-15 minutes.
- While pumpkin mixture is baking, prepare pie crust by rolling to whatever thickness you prefer.
- Cut pie crust into 5 inch circles using either a knife or a large cookie cutter.
Assembly Instructions:
- Spoon 1/4 cup of the pumpkin mixture onto the center of each pastry circle. You may need less filling depending on the size of your circles.
- Fold the pie dough over the filling to create a half-moon shape. Use the side of your hand to press the dough ends together, leaving about a 1/2-inch border. Use a fork to firmly seal the dough and for decorative crimping.
- Finally, cut 3 small lines on the tops of the pies for ventilation.
- Transfer pies to baking sheet, egg wash and sprinkle with sugar.
- Bake for 25-30 minutes, or until pie crust turns golden brown.
- Transfer to a cooling rack and rest for 5-10 minutes before serving.
