Homemade Ham and Cheese Hot Pocket Recipe
Hot Pockets are delicious, but are often filled with harmful ingredients and preservatives. Rid yourself of that microwavable mess and replace it with a much more satisfying treat. My Homemade Ham and Cheese Hot Pocket Recipe is perfect for a light meal or snack. Preparation is simple and ingredients are few. Trust me, these savory hand pies are so good they will become an instant household favorite.

Crust Ingredients:
1 3/4 cup All-Purpose Flour
2 tsp Baking Powder
1/2 tsp salt
1/2 cup (1 Stick) cold unsalted butter
3 tbsp Mustard
8 tbsp Ice Water
Filling/Assembly Ingredients:
Sliced ham*
Colby Jack Cheese*
1/2 tbsp Mayonnaise
Pepper
Salt
1 egg, beaten
*If you don’t have ham or Colby Jack cheese, use whatever deli meats and cheeses you prefer, or have available. The amount used is also up to your preference. If you like more crust, layer less filling and vise versa.
Instructions:
1. Add flour, baking powder and salt into a food processor. Cut the butter into 1/2-inch cubes and sprinkle over the dry ingredients. Blitz together. (If you are using a hand or stand mixer, break up the butter with your fingertips).
2. When the butter is broken into small bits, stir in mustard and water on top of the dry ingredients. Blitz in food processor until dough is formed. (If you are using a hand or stand mixer, be sure not to over-beat the dough but make sure butter us filly incorporated).
3. Once a dough forms, place it in plastic wrap. Refrigerate at least 1 hour, or until the dough is firm.

4. Preheat the oven to 400ËšF when dough is done chilling. Lightly grease cookie sheets if necessary. I use pampered chef sheets and they do not need to be greased. You can also use parchment paper.
5. Dust a large clean surface with flour and place the roll the dough out to a large square, approximately 16 inches. Cut the square into 4 quarters, or 8 x 8-inch squares.
6. Place ham and cheese onto one square, making sure there’s about a 1-inch border on the 3 closest edges. Sprinkle salt and pepper over the ham and cheese. In the middle of the opposite dough square spread the mayo.
7. Brush the edges of both dough squares with the egg wash, then fold the mayo side of the pastry dough over the ham and cheese. Trim the edges if needed and seal the edges all the way around with a fork. Then move the tart to the lined baking sheet and brush the top of the pastry with more egg wash. Repeat with the remaining dough squares. Give hot pockets at least one inch of space on the baking sheet.
8. Bake for 15 minutes, then turn the baking sheet 180Ëš. Bake for another 10- 15 minutes or until the crust is golden brown. Let cool on the baking pan, then move tart with a large spatula, to a wire cooling rack. Sprinkle the top of the tart with chives and serve warm or at room temperature.
